Dry Roasted Peanut Chutney Powder | Shenga Chutney Pitto

Peanut/Shenga[konkani] chutney powder. This is a very popular chutney powder or chutney pudi recipe and is generally served along with jawar roti or any millet roti. This is a north Karnataka-style peanut or groundnut chutney powder. But this chutney powder or chutney pudi is popular and familiar with the name shenga che chutney pitto. Preparing homemade chuteny pudi or powder is very easy and is a life saver too!! Shenga or peanuts are very tasty. I love to eat peanuts and I add them to different recipes. Peanuts are high in energy and rich in nutrients. But it is always safe to eat in moderation. Here is a detailed recipe for how to make this perfect chutney powder:

Ingredients

  • Raw Peanuts/Shenga/Groundnut - 1 cup
  • Garlic Pods - 8 small or 4 big
  • Kashmiri Red Chilli Powder - 2 Tbsp[As per taste]
  • Curry Leaves - ¼th cup
  • Turmeric Powder - ½ tsp
  • Tamarind - 2 inches
  • Salt - as per taste

Instructions

  1. Heat a heavy-bottomed pan. Dry roast peanuts on low-medium heat till they become crisp and the skin comes off easily. keep aside.
  2. Rub the roasted peanuts and blow the skin of the peanuts as much as possible.[This step can be replaced with roasting skinless peanuts/blanched peanuts or readymade roasted peanuts]
  3. Next, take a spoon of oil and roast garlic pods, curry leaves, and tamarind. Keep aside.
  4. In a mixie jar take all the roasted ingredients. In that add Kashmiri Red Chilli Powder[adjust according to your spice level], Turmeric Powder, and Salt.
  5. Pulse on high a few times and try to scrape and mix with a spatula so that the ingredients in the mixer jar become a fine powder evenly.
  6. Always grind on pulse mode so that the chutney powder becomes a coarse powder and not a nut butter!
  7. Allow the chutney powder to cool down and then store in an air-tight container.

Notes

  • To make it a spicy chutney powder, add more red chili powder, and pulse.
  • Always roast all the ingredients on low medium flame so that you don't burn anything.
