Chicken Rasam Soup Recipe | Country Chicken Soup | Cold Cough Remedy

Ingredients

To Crush:

  • Ginger-1 inch
  • Garlic-4 cloves
  • Green chili- 1
  • shallots- 3

To Powder:

  • Pepper- 2 tsp
  • Cumin-1 tsp
  • Coriander seeds-3 tsp
  • To make a Paste:
  • Turmeric- 1/2 tsp
  • Red chili (soaked in hot water)- 3[as per hotness preferred]

Other Ingredients:

  • Oil
  • Cinnamon- 1 inch
  • Cloves-3
  • Star-Anise-2
  • Curry Leaves-2 spring
  • Chicken carcass[Parts of chicken with bones]
  • Water
  • Tomato- 1
  • Coriander Leaves with roots
  • Salt

Instructions

  1. Firstly, clean the whole chicken to separate the chicken carcass[the bone part attached opposite to the breast.
  2. Slightly crush the bones with mortar or kitchen tool.
  3. Marinate with salt and keep aside.
  4. Make Paste and Powders as given in the Ingredients list.

To Make The Soup:

  1. Take a deep-bottomed Vessel.
  2. Add a little oil and whole spices.
  3. Then add Ginger garlic green chili paste.
  4. Then Shallot pastes and saute until the raw smell goes away.
  5. Add curry leaves, dry masala powders, and red chili paste, and give a good fry.
  6. Then add crushed chicken bone pieces and mix nicely.
  7. Once a boil comes, add tomato pieces and coriander leaves with roots chopped.
  8. Add extra curry leaves if desired.
  9. Add enough water and bring it to a boil.
  10. Boil for at least 30 minutes.
  11. Add lemon juice at the end and serve hot with steamed rice or have it just like that!

Notes

  • Always choose good quality fresh chicken to make the soup as the juices from organic, good quality chicken bones make a good soup.
  • Slightly crushing the chicken carcass is optional. But, it makes a huge difference to the soup.
  • Instead of red chili paste, powders also can be used.
  • Although Ginger Garlic paste can be added to make the soup, adding freshly crushed ginger, and garlic with green chili is recommended to have that authentic and flavorful rasam.
  • You can boil for more time if desired.
  • Or you can make this soup in a cooker for a quick soup!
