Udida Appe is a very easy and popular south indian breakfast recipe prepared from a batter similar to dosa / idli batter.This particular South Indian popular dish has a lot of names:

  • Udida Appe(Konkani), Paddu/Gundponglu/ Guliappa(Kannada), Ponganalu (Telugu), Paniyaram(Tamil), Unniyappam(Malayalam) and so on…

To make this unique breakfast item we require a special Pan(Appe Kayli in Konkani), which looks like the following.

It comes in as small as with 5 moulds and can be big enough to serve a whole village! Whatever the size of the pan is.. Appe / paddu are crispy like masala dosa on the outer side and when we open it is completely soft & fluffy like idlis! Only with the perfect fermented batter that will give these perfect textures..

One more important thing about appes is that they are not fried and take less oil / even no oil if we make them on a non stick appe pan.. Traditionally,our mothers and grandmothers have used the cast iron to make appes that are evenly cooked with crispy outer and they can be served with any type of chutney. We usually like to eat udida appe with coconut chutney/ garlic chutney/even chutney powder with coconut oil!Everything Tastes the best😋

Ingredients

  • 1 ½ cup dosa rice[preferred]/sona masuri rice/chawal
  • ½ cup Urad dal/split black lentils
  • 1 Tbsp Chana dal
  • ¼ cup beaten rice / thin poha
  • salt to taste
  • oil for greasing appe pan

Instructions

Soak Udad dal, Rice and Chana dal in water for at least 5 hours.

Soak thin poha for 15 minutes prior to grinding.

Then grind everything to a consistency of the smooth batter. (Do not add any salt before fermentation)

Transfer to a wide bowl. Close with a lid and keep in a warm place overnight to ferment the batter.

The next day, batter after fermenting will be raised /doubled. so carefully use a ladle and mix the fermented batter slightly.

Take only the required amount of fermented batter in a bowl before adding salt.

Add salt and mix the better.

Heat a appe pan on medium-high heat.

Pour little oil in each of the moulds. Now using a ladle, pour the batter into the moulds.

Keep the flame on medium and close the appe pan with a lid and cook the appe for 2-3 minutes.

Now open the lid and check if the batter is cooked. (only if the batter looks cooked,turn the appes.Otherwise close and cook till they are done)

When the upper part looks cooked, take 2 turners or spoons to turn the appes.

Let the appes cook and become crisp on both the sides. then take them out on a plate and serve with chutney of your choice! Coconut chutney / Garlic chutney / Chutney Powder.. Anything goes well with udida appes 🙂

Notes

  • Appes can be modified into sweet and savory. This a savory version.
  • We can add onions, curry leaves, coriander leaves, green chilies and make masala appes with the same batter.
  • If you like totally soft appes then add more udad dal and less rice. The key is more the rice, crispier the appes and more the udad dal.. softer the paddus!
