Ambe Humane/Upkari

Ambe upkari / Ambe humane is a special konkani dish that is prepared with a special type of mango that is grown locally and is specific to make this particular dish.

Usually these mangoes are very sweet and have lot of pulp. These varieties are called “ghonte ambe” in Konkani. Because they have big seeds(gorto) inside and the mango is so small that we can put the whole peeled mango inside our mouth at once! Every konkani would have tried it atleast once 😉

THis is one of many dishes that i craved and badly missed when we came to The States! Because finding indian mangoes in the USA is a challenge, let alone finding ghonte ambe ! But,the true konkani in me always tried to satisfy the craving with whatever I found 🙂 So, here I came up with a dish very near and dear to my stomach… Ambe upkari/ humane made with leftover ripe mango pits that I used to make ambe saati/mango papad.

Very simple ,not many ingredients and tastes divine for the pallets, sweeet,sour,spicy mango upkari recipe with all the steps given below.

Ingredients

  • Ripen Mangoes / Gonte Ambe 
  • Jaggery

For Seasoning:

  • Oil
  • Mustard seeds
  • Urad dal
  • Green chilies
  • Dry red chilly
  • Curry Leaves
  • Freshly grated coconut- 3 Tbsp

Instructions

To prepare ambe upkari:

First, Wash the ripe mangoes and peel the skin. Put a little water to the mango skin and squeeze all its juices.

Now add the mangoes in the juice and keep aside.

Take a heavy bottom pan. Put a little oil. As the oil gets hot add mustard seeds. When they splutter, add urad dal, slit green chilly, dry red chilly, curry leaves. Saute for a min.

Then, add peeled mango and its juices. Combine the seasoning well with the mangoes. Add jaggery pieces. Salt as per taste. Mix till it dissolves. Close the pan with a lid and let the mangoes cook in its juices. Open the lid and check when the juices reduce and become a little thick.

At last, add freshly grated coconut and mix nicely. Switch off the flame. Ambe upkari / humane is ready to serve as a side dish for lunch/dinner. Want to eat it like a dessert! Why not? 😉

Notes

  • Choose an overripe/sweet variety of mangoes to prepare this dish.
  • Small variety of mangoes are best to cook. So primarily, prefer small mangoes.
  • If we don't find small mangoes, any mangoes can be used to make humane.
  • Alternatively, add Mango puree or squeezed mango pulp while cooking mangoes to get thick humane rosu.
