Biscuit Ambado | Konkani Medu Vada Recipe
Ingredients
- 1 cup of Urad Dal
- 1-inch ginger, finely chopped
- Green Chillies
- Few Curry Leaves
- 1 tbsp Coriander Leaves, chopped
- Some Freshly Chopped Coconut Pieces
- Freshly Grated Coconut ¼ Cup
- Pinch Of Soda
- Salt To Taste
- Oil For Frying
Instructions
1. Soak 1 cup Urad Dal for 2 to 3 hours.
2. Grind to a smooth paste without adding water or adding a little bit of water.
3. Now add pieces of Ginger, Green Chilli, Curry Leaves, Coriander Leaves, Fresh coconut, Grated Coconut, Salt, Little Baking Soda.
4. Mix everything continuously till it becomes smooth and fluffy.
5. Check when oil is hot and carefully drop a spoonful of batter in the hot oil.
6. On medium heat, fry the Ambado till it becomes golden brown and crispy from all sides.
7. To make medu vada/toothu vada. Dip a ladle as shown in the picture.
8. Keep a dollop of batter on the ladle and make a hole in the center.
9. Now carefully drop the vada batter from ladle into the oil.
10. Fry till golden brown and crispy from all sides. Enjoy with coconut hing chutney.
Notes
- Do not add too much water while grinding urad dal. Just wet a mixer/grinder and grind.
- Do not worry if the batter is not super smooth like dosa batter.
- Konkani Vadas are specially made during festivals and konkani weddings, so onions are not used in this version.
- Sambar and Chutney are good companions with these vadas.
