Chicken Donne Biryani Recipe is very popular in the city of Bangalore. The steaming hot biryani is served in a large dried palm leaf cups called ‘Donne’ and hence the name. You can serve it with Raita of your choice.
As i don’t have a donne, I have served the biryani on banana leaf with cucumber,tomato raita, crispy green chicken kabab and hot and spicy soup!
Chicken Donne Biryani Recipe- Namma Bengaluru Style
Chicken Donne Biryani Recipe is very popular in the city of Bangalore. The steaming hot biryani is served in a large dried palm leaf cups called 'Donne' and hence the name. You can serve it with Raita of your choice.
Ingredients
- Chicken - ½ Kg
- Whole Garam Masala(Refer Pic)
- Onion - 1 small
- Tomato - 1 small
- Jeera Rice( preferred) / Any Rice - 1 Kg(4 cups)
- Oil - 4 Tbsp
For the Marination:
- Turmeric Powder - ½ tsp
- Red Chilly Powder - ½ tsp
- Coriander Powder - 1 Tbsp
- Cumin Powder - ½ tsp
- Biryani Powder - 1 Tbsp
- Salt
For Green Masala
- Mint Leaves - 1 Bunch
- Coriander Leaves - 1 Bunch
- Garlic - 1 Whole
- Ginger - 2 inches
- Green Chillies - 3
- Onion - ¼
- Lemon
Instructions
Marinate the chicken for atleast half an hour with the following ingredients
Soak the Jeera Rice for half an hour
Whole Garam Masala :
Bay Leaf,Small Cardamom, Big Cardamom, Biryani Flower, Star Anise, Cloves, Cinnamon Sticks
Grind Green Masala To A Smooth Paste :
Now in a heavy bottom Cooker/Big Vessel put 4 Tbsp Oil
Drop the whole garam masala in the hot oil
Put some onion pieces and saute nicely
Then add the green masala to it and saute on medium low heat
Saute till the raw smell is gone ,the masala leaves oil and changes in color
Now add the marinated chicken pieces and mix nicely
Add tomato pieces
Add little water, mix , close and cook till chicken is half done
Add Water 2 : 1 Rice Ratio. ( Jeera Rice can become easily mushy if added too much water. So add little less than usual(see if chicken has left water while cooking.. then adjust accordingly)
Close and bring to a boil
Then add soaked rice,check for salt, add lemon juice
Close and cook on high flame till the rice is half done
Heat a tawa
Keep the cooker on the tawa, heat on low flame. Cover the opening of the cooker with a mortor
Cook for 15 minutes on low flame
Switch off the flame and open the lid. Let it sit for 10 minutes then check without breaking the rice.
Finally, Donne Biryani is served and tastes great with yogurt raita, some Green Kababs , Hot and spicy chicken biryani soup ,some onions & lemon A Complete Meal Namma Bengaluru Style! Enjoy 🙂
Notes
- Authentic Donne Biryani smells divine when prepared with jeera rice.
- Always use fresh garam masala, herbs for rich flavors.
- Marinating chicken is a very important step as it enhances the flavor of the chicken.
- Some times while cooking, the chicken may leave some liquid. So, be careful while adding water.
- Instead of a cooker we can use any heavy bottom pan/vessel and close it with a plate tightly then keep a small vessel filled with hot water on top of it. Doing so will help the plate sit tight and the air doesn't pass through. The cooking time will be the same.
- Do not check the rice as soon as you open the lid, leave it for 10 minutes, let it cool down a bit then gently, fluff the rice.
