Crispy Dosa | Masala Dosa

Dosa Hmmm. . . Masala Dosa 🙂 Every household in south India must be having its own version of Dosa and Idli. And this is a special version as this Dosa is a very special dosa that I prepare for my family 🙂

Whether we want to make a cone dosa or cylindrical dosa or any geometrical shape dosa, Batter is the same! 😉 Just make it crispy… That’s It!

So here is a detailed recipe to make crispy masala dosa:

Total Time 9 hours 5 minutes

Ingredients

  • 4 cups- Dosa/Idli Rice
  • 1 Cup- Urad Dal
  • 2 Tsp- Methi/Fenugreek seeds
  • 2 TBSP- Chana Dal
  • 1 Fist Full Poha / Leftover Rice
  • Salt

Instructions

  1. Wash and Soak Urad dal, Chana Dal, and methi in water for at least 4 hours.
  2. Also, wash and soak rice in a separate vessel.
  3. After soaking, take a mixer jar/ wet Grinder and grind urad dal, Chana Dal and methi to a fine paste.
  4. Then remove the ground paste into a bowl.
  5. Now grind rice into a fine paste with poha / leftover rice.
  6. Mix it with urad dal paste.
  7. Keep the batter to ferment overnight or at least for 8 hours.
  8. The next day, take the required amount of fermented batter and add salt as per taste.
  9. Use Iron Tawa to make crispy golden brown hotel-style dosas.
  10. Put a little oil on tawa with gas on medium flame.
  11. sprinkle some water and immediately spread dosa batter in a thin circular shape.
  12. Close and let cook for a minute or so...
  13. Open and check if the dosa is cooked and smear some oil and let it crisp up!
  14. Just when you see the golden brown color on the dosa, take a dosa spatula and take it on a plate.
  • To make cone dosa:
  1. After cooking the dosa properly, make a sharp cut from the outer side of the dosa till the middle and start rolling in a cone shape.
  • Serve with Hing chutney / Coriander Chutney / Potato bhaji.

Notes

  • Make sure to ferment the dosa batter well to get the perfect crispy dosa.
  • Always grind urad dal and rice separately to get the batter consistency perfectly.
  • Using cast iron tawa to make dosas will give perfect crispy dosas.
