The low glycemic index and the high fiber in millets will help to keep you feeling fuller for a longer time and helps in weight loss! This idli/dosa batter can be kept in the fridge for up to 4 days. Ingredients

  • 2 cups Little millet [Chama rice/Sama Rice/Sama ke chawal]
  • 1 cup urad dal
  • 2 tbsp raw rice
  • 3 tbsp methi seeds (fenugreek seeds)
  • 1 handful of cooked rice (optional)
  • Salt

Instructions

  1. Wash and Soak Little millet with Urad dal, Fenugreek[methi], and raw rice.
  2. Soak the millet at least for 8 hours as the millets must be soaked for at least 6 to 8 hrs or more for its optimum benefits.
  3. Grind with a handful of cooked rice after a good soaking time in a mixer or grinder.
  4. Keep in a warm place to ferment for at least 8 hours.
  5. The next day after fermentation, Take the required batter and add salt to make Idli or dosa:)
  6. Serve with Chutney and Potato Bhaji.

Notes

  • Millets are beneficial when soaked for more time. so don't skip a good soaking time!
  • Salt inhibits fermentation and interferes with good bacteria to a certain extent. So one might want to add the salt after fermentation.
  • Consume at least one millet per day for higher health benefit.
