Easy Chicken Curry | Quick Chicken Curry

Ingredients

  • Chicken- 1 kg, with bone, clean and cut into medium size pieces
  • Onions- 2, medium, finely chopped
  • Ginger-Garlic paste- 1 Tbsp
  • Turmeric powder 1/4 tsp
  • red chilli powder 1/2 tsp
  • Black peppercorns powder 1 tsp
  • Cumin powder 3/4 tsp
  • Tomato- 1 small
  • Coriander powder 1 1/2 tbsps
  • Cloves 3 whole
  • Cinnamon 1" piece whole
  • Fennel seeds- 1 tsp
  • Salt to taste
  • Oil 3 tbsp
  • Coriander leaves to garnish
  • lemon juice[optional]

To Grind Masala:

  • Onion 1, small, sliced
  • Coconut 1/2 cup, fresh and grated
  • Dry red chilies 7-8, de-seed (I used 6 chilies)
  • Tamarind paste/tamarind piece 1 tbsp
  • Coriander leaves a fresh- half bunch

Instructions

  1. Marinate the chicken with salt, turmeric powder, and red chilly powder for at least 30 minutes or more.
  2. In a heavy-bottomed pan heat oil/ghee and add whole garam masala with onion pieces.
  3. Saute onions till they turn pink.
  4. Then add ground masala /coconut paste mentioned under grinding.
  5. When it leaves oil, add the marinated chicken and coat it with the masala nicely.
  6. Add Coriander, cumin, and pepper powder, and mix everything.
  7. Add little water and close and cook till the chicken is tender.
  8. Add chopped tomato pieces, close, and cook till everything is well combined.
  9. The final stage will have oil floating on top of the coconut masala.
  10. Means, it is done! Serve with hot steamed rice or chapati/phulka/roti/ Even tastes best with akki roti, ragi roti, or any millet roti 🙂

Notes

  • This is a very simple yet delicious chicken side dish or a main coarse dish.
  • Alternatively, garam masala powder can be used instead of whole garam masala.
  • Coconut milk can be used instead of the whole coconut.
  • This dish can be done beforehand and reheated to get more rich flavors as reheating will give out more flavors to the curry.
