Kande Bhakri- Onion Bhakri With Fresh Coconut Water

Onion- Kande is a household vegetable that can make anybody cry 😪 Not while eating though 😉 Raw, sauteed, cooked, pureed from breakfast to dinner, onions can be used in many ways.

While we love to put lots of onions-kande in uppit, pohe, polo-dosa, chutney, for the breakfast, this instant kande bhakri is exceptionally tasty as they are roasted on tawa with ghee. It becomes crispy from the outside yet soft and melting from the inside. The bhakris can be made in 2 ways, one is with Rava/suji/ semolina and one more is with rice flour[tandla pita bhakri]. Both taste great with unique flavors!

Kande Rava Bhakri- Onion Rava Bhakri With Fresh Coconut Water

Ingredients

  • Onion - 1 big / 3 medium
  • Sooji[Semolina/Rava] - 1 Cup
  • Coconut Water / Normal Water- 1 to 1½ Cups
  • Freshly grated coconut- ½ Cup
  • Green chilly as per hotness preferred
  • Salt to taste
  • Banana Leaf / Parchment Paper/ Plastic sheet

Instructions

Pre- Preparations:

1. Crack open a coconut and save the water in a cup.

2. Grate half of the coconut [Do not include the brown part of the coconut].

3. Finely chop an onion, green chilies and put them in a bowl. Mix it with grated coconut and salt.

4. Mix it with your hands and then add Semolina/Rava.

5. Combine everything and mix nicely. Now mix the coconut water into the Rava mixture and combine.

6. Let it sit for 15 mins till the Rava soaks all the coconut water. Now the mixture is ready to make bhakris.

How to make bhakris:

1. Take a banana leaf big enough to spread a bhakri.

2. Spread some oil and water mixture on the leaf so the batter won't stick to the leaf.

3. Take a fistful of Rava mixture and dab on the banana leaf.

4. Start spreading the batter from the middle in a circular shape.[ Apply little water to fingers to help spread the batter]

5. Heat an iron Tawa on medium flame and apply some oil.

6. Take the banana leaf onto your palm, carefully place it on the hot tawa, placing batter side down.

7. Dab on the banana leaf for a minute. Then the leaf comes off easily leaving bhakri on the tawa.

8. Close the bhakri and allow it to cook for 2 minutes.

9. Open and let sit for a minute or so, apply ghee or oil and turn the bhakri.

10. Roast on medium heat till the onion bhakri becomes crispy golden brown.

Serve with coconut chutney or dry chutney powder.

Notes

  • Choose a good fresh coconut to make this bhakris.
  • Squeeze and mix onion, green chilly, grated coconut, and salt thoroughly with hand before adding rava.
  • After adding rava, mixing it evenly is important. Then add the coconut water to combine everything.
  • Do not worry if you add more coconut water, rava will soak all the water in no time.
  • Adjust the heat according to the type of tawa used. Between iron tawa is always the best to make any type of bhakri. Tasty and healthy! 🤤😋
