Oats and Beetroot Cutlet

Beetroots combine with oats is a healthy morning breakfast or evening snack that we prepare once we have harvested our first batch of beetroots from our garden. They not only have a popping color that attracts my kids to munch on them but also has that natural sweet taste that goes well with all the spice powders we use.

Cutlets are usually prepared deep fried or shallow fried with a combination of many veggies. Here we have used grated beets, boiled potatoes, and peas. Below is a detailed recipe of shallow fried cutlet:

Ingredients

  • Beetroot - grated 2 cup
  • 1 Onion- cut into small pieces
  • Potatoes- Boiled & Peeled
  • Turmeric powder- ¼ tsp
  • Chilly powder- ½ tsp
  • Cumin powder- ½ tsp
  • Coriander pwder- 1 tsp
  • Chaat Masala/ Aamchur powder- ½ tsp
  • Oats [powdered fine] 
  • Coriander leaves finely chopped
  • Salt

Batter ingredients to dip cutlets

  • Rice flour/Corn flour - 2 Tbsp
  • Maida/All purpose flour - 1 Tbsp
  • Black Pepper Powder- ¼ tsp
  • Salt
  • Water- As required

Instructions

Pre- Preparations to make cutlet:

  1. Boil 2 big potatoes, peel the skin and keep aside.
  2. Grate the beetroot and keep aside.
  3. Chop Onions into small pieces

To make cutlet:

  1. Mix the grated beetroot, onions and add smashed potatoes.
  2. Now add all the dry powders one by one to it. [turmeric, red chilly, cumin, coriander, chaat powders]
  3. Then add finely powdered oats to bind all the ingredients[ add according to the consistency where the mixture can be shaped properly like a dough.

To prepare dipping batter:

  1. Mix flours with black pepper powder, salt, and water to make a running consistency batter.

Assembling & frying cutlets:

  1. Take out a small portion of dough and make a ball shape and gently press to make a flat circular patty.
  2. Make all the patties and keep aside.
  3. Heat an iron pan and smear little oil to it.
  4. Now dip the patties in the batter and coat nicely with the batter.
  5. Then coat the patties with oats powder.
  6. Place the patties one by one on the hot Tawa and cook on medium flame till it gets a golden crispy color.
  7. Then turn the patty onto the other side and cook it as well.
  8. Take out when both sides of the patties are a crispy golden color and serve with coriander chutney or tomato ketchup.

Notes

  • These cutlets are a healthy version of regular cutlets, where we have substituted bread crumbs with oats powder.
  • Instead of shallow frying, these cutlets can also be deep-fried and enjoyed.
