Khara Shankarpali(spicy)
Quick & Easy Tea Time Snack.
Ingredients
- Maida / All purpose flour - 1 cup
- Chilly Powder - 1/2 Tsp
- Salt as per taste
- Hot oil - 1 Tbsp
- Water to knead - approximately 6 Tbsp
- Oil for frying.
Instructions
- Mix maida,red chilly powder, salt.
- To this add hot oil and mix with hands rubbing oil to flour mixture.
- Now add water little by little to form poori like dough.
- Knead the dough for 2 minutes.
- Make rolling size balls.
- Apply dry flour and roll as thin as possible.
- Take a knife, pizza cutter or shankarpali cutter to cut the rolled dough in diamond shape.
- Put the shankarpali Pieces into hot oil.
- Flip over so that it cooks on both sides.
- Fry them to nice golden brown on low-medium flame.
- Drain them on a paper towel to remove excess oil.
- Allow them to cool at room temperature and store them in an airtight container.
Notes
- Do not add all the water at once while kneading. Add slowly as you need and form a medium tough dough.
- Put some dry flour just before cutting the rolled dough so that the shapes comes out easily.
- Always test oil by dropping a small piece before putting the entire batch to fry.
- If the shankarpali dough pieces are hugging each other after cutting, then do not worry, once they are dropped in hot oil, they get seperated.
