Restaurant style Palak Paneer at home

Ingredients

  • 1 bunch Palak + Water for blanching
  • Paneer - 200 gms
  • Turmeric, Red Chilly, Cumin, Coriander powder - 1/2 tsp
  • Onion - 1, Ginger, Garlic, Cumin - 1/2 tsp, Green chilly - 1 or 2, 1 Tbsp thick yogurt, Tomato - 1 big
  • Garam Masala powder - 1/2 Tsp
  • Grated Paneer for garnishing.

Instructions

    1. Cook palak in hot water for 2 minutes and immediately put it in ice cold water.

    2. Put butter/oil in a pan and saute onions,ginger, garlic,cumin,green chilly on a medium flame.

    3. Add some salt and then add tomato pieces. saute nicely

    4. Now add sauteed masala in a blender with cooked spinach +

    5. Add 1 Tbsp thick yogurt/curd and blend everything to a smooth paste. (Adding yogurt while blending helps in thorough mixing and prevent splitting).

    6. Now in the same pan take 1 tspn of oil and fry the masala powders on a low flame.

    7. To this add the ground masala and mix everything properly.

    8. Add some garam masala powder and mix. Check for seasoning at this stage.

    9. Add Paneer cubes . Mix & close the lid. Cook for 2 minutes(till the paneer becomes soft)

    10. Finally, garnish with some grated paneer and serve with basmatic rice, naan or chapati.

Notes

  • Do not Boil the spinach. Otherwise it will loose its color,taste and nutrients.
  • Always keep pan on low flame while frying masala powder.
  • Do not add yogurt directly while cooking, it may cause splitting due to heat.
