Taushe Bhakri | Cucumber Bhakri

Taushe Bhakri is an instant Konkani breakfast that is not only healthy but, also tastier than tasty🤤 Mostly in summer we are growing different varieties of cucumbers like pickling cucumbers, English cucumbers, slicing cucumbers, straight 8 to name a few… and we have tried the bhakri with almost all types of cucumbers we have grown till now & every variety tastes great!

Picking the cucumbers at the right time is a task in itself. But, whenever we have a juicy cucumber ready to harvest, this bhakri is what we make for breakfast.

Here is a detailed recipe to make this quick, easy, and instant taushe bhakri for breakfast or evening snack:

Ingredients

  • Grated Cucumber- 2 cups[2 medium cucumber]
  • Rava/Semolina- 1 Cup
  • Freshly Grated Coconut- ½ Cup
  • Finely Chopped Green Chillies- 2 [As per preferred taste]
  • Jaggery- 3 TBSP
  • Ghee
  • Salt

Instructions

To prepare the batter:

1. Grate cucumbers into a bowl.

2. Cut green chilies into small pieces.

3. Powder/ Grate some jaggery.

4. Grate coconut and keep aside.

5. Mix grated cucumbers with all ingredients together and mix with hands, then add Rava/semolina to make a thick batter of dropping consistency.[Don't add too much Rava. Keep the batter semi watery as the Rava will soak all the cucumber water and become glutenous]

6. Cover and set aside for 15 minutes so that the semolina soaks up the juices of the cucumber.


Steps To Make Taushe Bhakri | Cucumber Bhakri:

1. Heat Iron Tawa on low flame and Smear a few drops of ghee or oil on the surface.

2. Place about a fist full of batter in the middle of the Tawa.

3. Use your fingers to quickly pat it into a circle.

4. Spread it as thin as possible.

6. Increase the flame to medium.

7. Cover and cook the bhakri for about 3 minutes.

8. Using a turner spatula, gently loosen the bhakri from the pan. Lift the edges to check that the sides touching the pan have cooked and turned golden brown in color.

9. Flip the Taushe Bhakri and let it cook for 2 minutes. Put more ghee to have kurkuri[Roasted] Bhakri.

Serve Taushe Bhakri hot with chutney pitto/gun powder and ghee.

Notes

  • Choose fresh and juicy cucumbers while making bhakri so that it leaves enough water to soak Rava.
  • Don't add too much rava at once. add little by little and make semi-liquidy batter and set aside for at least 20 minutes. Too much rava will make bhakris hard!
  • Adjust sweetness with jaggery according to your preference.
  • Be careful while spreading the batter on hot Tawa.
