Vegetable Tawa Pulav is cooked on a large tawa when its prepared in the restaurants / at street food stalls. But, at home we can take our roti tawa (depending upon the quantity we are making) and prepare the vegetable mixture on it and then while adding rice, we can just toss it in any large pan and simmer for 3 minutes before serving.
We can altogether skip the tawa and prepare the whole dish in a pan. Any which way we choose to cook,this dish is lipsmacking!
Here is a detailed recipe on how to prepare Vegetable Tawa Pulav street style at home:
Vegetable Tawa Pulav | Tava Pulao Recipe
Ingredients
- 2 tbsp butter + 1 tbsp oil
- Cumin seeds - 1 tsp
- Onions- sliced 1 medium
- Ginger garlic paste-1 tbsp
- Red chili paste- 2 Tbsp[For Red Chilli Paste: 3-4 whole red Kashmiri chilies, soaked 4-5 garlic cloves,1 tsp cumin seeds]
- Veggies---Shredded cabbage - 1 cup,Green capsicum/ Bell pepper-¼ cup,Tomato(deseeded), sliced-1 medium,Potatoes-½ cup cubed & boiled,French beans- ¼ cup,¼ cup green peas, boiled.
- 2 cups cooked rice[Leftover rice]
- ½ tbsp lime juice
- 1 tbsp Pav bhaji masala
- Salt to taste
Instructions
- To prepare Red chili paste: Add soaked red chilies, garlic cloves and cumin seeds in a blender, blend to a smooth paste, and set aside.[See notes for easy method]
- To Prepare tawa Pulav: Heat butter and oil on a tawa[Tawa pulav tastes best when made on a tawa ;)]
- add cumin seeds and allow to splutter.
- Add the sliced onions and sauté till translucent.
- Add ginger-garlic paste and sauté till the raw smell is gone.
- Add the prepared red chili paste, mix well, and cook for a few minutes.
- Add cabbage, mix well and cook for 3-4 minutes.
- Add green capsicum, tomato, potatoes, and French beans mix well and cook for 5-6 minutes.
- Add salt and mix well.
- Add the green peas, mix well, and cook for 2-3 minutes.
- Add the cooked rice[leftover rice] and toss with the cooked vegetable mixture.
- Add lemon juice and Pav bhaji masala, mix well close and cook for 1-2 minutes.
- Open and check the seasoning. add chopped coriander and switch off the flame.
- Yummy Street style tawa pulav is ready to be served.
- Enjoy with onion tomato raita or just plain curd.
Notes
- To avoid the cooking time, we can use the store brought red chili garlic sauce instead of homemade. Tastes similar.
- Use leftover rice for better texture.
- This recipe can be made quickly if all the vegetables are precut and kept. Like a quick pulav in a hurry.
