Pansa Idli / Steamed Jackfruit Idli

PANAS! Can you smell this word just like me? Wait… This takes me to my sweetest childhood memory lane where the whole Jackfruit after picking from the tree was kept in a corner and as it ripes, the aroma of the Jackfruit is filled in each and every corner of the house and nose! The very day everyone in my family sat on a mat of newspaper rubbing coconut oil to their palms waiting to dig into the jackfruit and my Mom starts cutting the whole fruit on oil-smeared advoli (cutter) into half then quarter removing the sticky core and passed it on to everyone. No one could resist eating just one pod of jackfruit flesh … and after finishing quite a few the remaining would be for the after treats that my mom would make using raw and ripe Jackfruit pods flesh like Pansa Mulik(Jackfruit Fritters), Pansa Balka( Jackfruit Chips), Pansa Patholi( Konkani Style Steamed Jackfruit Dumplings), Pansa Bhakri(Jackfruit Roti) and also saved the seeds from the pod to use them in curries, roasting on charcoal, boiled, steamed ..One fruit and so many recipes!! yumm yumm yumm!!

When my husband and I moved to the states, the first thing we made was a list of items that we didn’t find here… the list was too long, to be honest! And JACKFRUIT was one of them! But, as the days passed by, we explored many Asian grocery stores and finally, one day when our nose hit by a strong fragrance of ripe Jackfruit.. we were in tears! (tears of joy) ! The only item we brought home that day was the ripe Jackfruit that became our dinner and the next morning the breakfast and remaining we made coconut jaggery stuffed Jackfruit bhakris ! Finger Licking Good!

Its been 6 years in the bay area and every time we get a ripe jackfruit… there are 3 compulsory delicacies that we make Pansa Mulik, Pansa Bhakri and Pansa Idli.

The Jackfruit Idlis can be made using soaked raw rice or store brought idli Rava. We personally like the idlis with soaked raw rice. It is much softer and just melts in the mouth. You must try it to believe it! Thank me later!

Pansa Idli / Steamed Jackfruit Idli

Pansa Idli is a Konkani breakfast or tea time snack that is aromatic, soft and full of flavor. In Konkani Panas means Jackfruit and Idlis are steamed rice cakes. The combination of jackfruit puree with the rice batter enhances the flavor as it is steamed... the house is filled with the smell of jackfruit and it can be eaten with homemade ghee/ clarified butter.

Ingredients

  • Ripe Jackfruit Pods -15 (Adjust according to the sweetness of Jackfruit)
  • Raw Rice(Dosa/Idli Rice) - 1 and 1/2 cups
  • 1/2 of the fresh Coconut Scrapped 
  • Jaggery/Goda - 1 big(Adjust according to your sweet preferences)
  • Cardamom / Velchi Powder - 1 tspn
  • Salt -as per taste
  • Banana leaves / Idli Steamer
  • Lots Of Ghee / Toop / Clarified Butter

Instructions

  1. Soak dosa rice in water for 2 hours.
  2. Make some fresh cardamom powder.
  3. Use freshly grated coconut.
  4. Take a blender and add scrapped coconut, jaggery, ripe jackfruit pieces, soaked rice and blend without adding any water to a smooth paste.
  5. To this add salt, powdered cardamom, ghee(clarified butter) and mix everything nicely.
  6. To make idlis using banana leaves, make cone shaped pockets as shown in the pictures/video and nicely secure using a toothpick.
  7. Fill the cone with batter and secure, then place on steamer.
  8. Time to steam idlis using banana leaves depends on the size of the cone we make. so as i used baby banana leaves they took me about 15 minutes to steam.
  9. The color of the banana leaves turns dark as the idlis are steamed.
  10. To make idlis using idli steamer, First grease the molds with ghee and pour the batter.
  11. Adding Cashew nut pieces are optional then, steam for 15 minutes on medium flame...
  12. Check by inserting a toothpick or knife, it should come out clean when done.
  13. Always serve/eat these delicious idlis with homemade ghee.
  14. And That Tastes DIVINE 😛

Notes

  • Instead of dosa rice we can make these idlis using idli rava.
  • While making cone shape pockets using banana leaves, it can be hard to mold it.. it can tear and to avoid that just hold the banana leaf over the flame so that it softens and its easier to work with.
