Patholi is something that Konkanis adore… It is VIS(Very Important Sweet) under list of Konkani Sweets. The main reason behind this is the authentic Patholi is made using turmeric leaves and these leaves are not easily available during non festive time unless you are growing it in your backyard..          There are many ways konkanis use fresh and dried turmeric leaves in various konkani recipes, both in savory as well as sweets. This aromatic herb gives a unique flavor that enhances the taste of any dish that its added.. not only its taste but,the aroma of the dish is enhanced by adding even the dried ones to certain dishes while cooking! There are several health benefits such has anti inflammatory properties similar to using turmeric roots in cooking. There is no part of turmeric that is unfavorable.

       Patholi is a must during shravan festivals especially in konkani homes. As soon as the auspicious shravan month begins and on the first shravan festival NagPanchmi i.e., panchami day of the shuklapaksha of shravanmas, these steamy hot patholis are prepared.

        The rule of NO FRYING / SEASONING and only STEAMED FOOD on the day of nagpanchmi is very significant and followed in many konkani homes even today. This rule makes it evident to prepare patholis on nagpanchmi [ This is exactly why we love this rule 😉 ].

        I still remember our 1st nagarpanchmi in USA 2014, I didn’t know what festive dish to prepare and offer god that wouldn’t require seasoning / frying! let alone turmeric leaves… And this year(2019) I was able to grow this wonderful herb right in my backyard from store brought turmeric rhizomes! Now that was a good wait time of nearly 5 years to taste this here.. Lets see all the steps from preparing this delicacy till how we eat it :p

Patholi is one of amchis favorite sweets. The combination of coconut and jaggery with a dash of ghee which is hidden inside the rice batter spread on the aromatic turmeric leaves... will not only smell divine... but, taste delicious. Check this recipe for the perfect measurements so that Patholi breaks only inside your mouth 😉

Ingredients

Ingredients to prepare the filling :

  • Jaggery - 3/4th Cup
  • Grated Coconut - 1 Cup
  • Ghee - 1 Tbsp
  • Cardamom - 5

Ingredients to prepare the batter :

  • Dosa Rice - 1 Cup (Soak for 2 hrs)
  • Grated Coconut - 1/4th Cup
  • Salt - A Pinch

Turmeric Leaves - 15

Instructions

1. To prepare the filling, take 3/4th cup of jaggery and 1 cup of grated coconut

2. Top it with a spoon of ghee / clarified butter.

3. Now mix all 3 without adding any water and heat on low flame

4. Add cardamom powder

5. Heat the mixture till the jaggery melts and combines uniformly with coconut

6. Soak 1 cup dosa rice for 2 hours

7. To make the batter- In a mixer take the soaked rice , 1/4th cup coconut and a pinch of salt and grind to a smooth paste adding little water

8. Use fresh turmeric leaves

9. Spread a thin layer of the batter on the turmeric leaf as shown in the picture / refer video

10. Arrange the filling(huran) in the middle.

11. Now fold the ends as shown

12. Arrange them on a steamer plate/ basket

13. Steam for 15 minutes

14. Let Sit for 5 minutes

15. When we open the leaf, the leaf must come out clean.

Now We Can enjoy this steamy hot Patholi with homemade Ghee . ( No One Can Eat Just One 😉

Notes

  • While preparing huran(filling) do not add water. If you think you might burn the jaggery, just heat it on a low flame and keep stirring till it melts.
  • This will prevent the filling from oozing out moisture while it is steaming.
  • While spreading the batter on leaf.. if it feels dry and sticky.. just wet your hand and then spread. This helps in smooth spreading.
  • Any number of patholis can be piled up on one another.. this will not effect the cooking time of patholis.
